Ingredients (for 2 servings)

Tempura Batter

  • 1 cup all-purpose flour
  • ¾ cup + 1 tablespoon (200ml) cold water
  • 2 tablespoons mayonnaise (Kewpie mayonnaise recommended)

Frying oil

Choose your favorite ingredients. Examples:

  • Shrimp
  • Zucchini
  • Sweet potato
  • Broccoli
  • Mushrooms
  • Green beans
  • Frying oil (vegetable oil)

Instructions

  1. Mix water and mayonnaise.

In a large bowl, combine the cold water and mayonnaise and mix well with a whisk.

It’s okay if there are small lumps in the mayonnaise. It doesn’t need to be completely smooth.

  1. Add flour.

Add the flour to the bowl.

Using chopsticks or a fork, gently mix until the flour is evenly distributed.

Don’t overmix! A few lumps are perfectly fine. Overmixing will develop gluten, compromising the crispness of the batter.

Dip your favorite vegetables and shrimp in the batter.

Fry carefully in oil heated to 170-180°C (340-355°F) until golden brown and crispy.

Transfer to a wire rack or kitchen paper and serve hot.
