Want to experience the ultimate, comforting Japanese breakfast in just 1 minute? Try Tamago Kake Gohan (commonly known as TKG)! This traditional dish features a steaming bowl of hot white rice topped with a fresh, creamy egg yolk and a splash of savory soy sauce. Combined with seasoned bonito flakes (Okaka), it’s ultra-rich, velvety smooth, and pure perfection.
While it is a daily staple in Japan and heavily featured in popular anime series, many international foodies ask: “Is it safe to eat raw eggs?”
The answer is YES, with a quick safety hack! The secret to enjoying this dish safely anywhere in the world is using pasteurized eggs, or using a super quick 60-second kitchen hack to pasteurize eggs at home using hot water. With just 1 minute and a few pantry staples, you can bring the cozy flavor of a Tokyo morning straight to your kitchen!
Ingredients (Serves 1)
- Hot cooked white rice: 1 cozy bowl (steaming hot is best!)
- Fresh egg (preferably organic or pasteurized): 1 large (You can use just the vibrant yolk for a premium finish!)
- Savory Bonito Flakes (Umami Katsuobushi): 1-2 tbsp (Seasoned with a drop of soy sauce for the ultimate depth of flavor)
- Soy sauce (or Shiro-dashi): 1 tsp (to taste)

[Optional Toppings for Extra Flavor]
- Finely chopped green onions: 1 tsp
- Toasted sesame seeds: A pinch
- Shredded nori seaweed: A pinch
- A tiny splash of sesame oil
How to Make
- Prep the Savory Bonito Flakes (Okaka)
In a small dish, mix 1-2 tablespoons of bonito flakes with a drop of soy sauce. Stir gently until the flakes absorb the savory sauce. This creates an incredible umami layer beneath the egg! - Build the Rice Base
Scoop a generous portion of steaming hot white rice into a bowl. Use a spoon to make a small, shallow well right in the center of the rice, then spread your seasoned bonito flakes evenly around or inside the well. - Drop the Golden Yolk
Gently crack the fresh egg and drop it directly into the center well. (For an extra luxurious, photogenic finish, use just the vibrant orange egg yolk!) - Drizzle and Customize!
Drizzle 1 teaspoon of soy sauce or Shiro-dashi over the egg. Scatter a pinch of chopped green onions, sesame seeds, and shredded nori on top if desired.

Give it a vigorous stir with your chopsticks until the egg becomes light and frothy, coating every single grain of rice in a golden, velvety sauce. Enjoy immediately!
